- Cornflour: 2 tablespoons
- Chickpea flour (Besan): 2 tablespoons
- Curry leaves: A few (optional)
For Frying
- Oil: For deep frying
- Fresh coriander leaves: For garnish
Instructions
Step 1: Marinating the Chicken
- In a large bowl, mix the boneless chicken with yogurt, ginger-garlic paste, red chili powder, turmeric powder, coriander powder, cumin powder, garam masala, salt, and lemon juice.
- Stir well until the chicken pieces are well coated with the marinade.
- Let it marinate for at least 30 minutes to an hour, or overnight for deeper flavor.
Step 2: Preparing the Batter
- In a separate bowl, combine rice flour, cornflour, chickpea flour, and a pinch of salt.
- Add the marinated chicken pieces to this dry mixture. Mix well to coat the chicken in the flour mixture.
- Optionally, add a few crushed curry leaves for an extra burst of flavor.
Step 3: Frying the Pakoras
- Heat oil in a deep pan or wok over medium-high heat.
- Once the oil is hot (test by dropping a small piece of batter in—the oil should sizzle), gently drop the coated chicken pieces into the hot oil, one by one.
- Fry the chicken in batches, ensuring not to overcrowd the pan, for about 4-5 minutes or until golden brown and crispy.
- Remove the pakoras from the oil and place them on paper towels to drain excess oil.
Step 4: Serving
- Garnish the Andhra-style Spicy Chicken Pakoras with fresh coriander leaves.
- Serve hot with a side of mint chutney or tangy tamarind chutney for dipping. Enjoy!
