Andhra-style Spicy Chicken Pakora

It is a super crispy and spicy snack loved by everyone. Chicken pieces are marinated in bold Andhra spices, coated with flour, and deep-fried until golden brown. The outside is crunchy, while the inside stays juicy and flavorful. It’s perfect with chutney or just hot chai.

Ingredients

For the Marinade

  • Boneless chicken (cut into bite-sized pieces): 500 g
  • Yogurt: 3 tablespoons
  • Ginger-garlic paste: 1 tablespoon
  • Red chili powder: 1 tablespoon
  • Turmeric powder: 1/2 teaspoon
  • Coriander powder: 1 teaspoon
  • Cumin powder: 1/2 teaspoon
  • Garam masala: 1 teaspoon
  • Salt: To taste
  • Lemon juice: 1 tablespoon
  • Rice flour: 1 tablespoon (for crispiness)
  • Cornflour: 2 tablespoons
  • Chickpea flour (Besan): 2 tablespoons
  • Curry leaves: A few (optional)

For Frying

  • Oil: For deep frying
  • Fresh coriander leaves: For garnish

Instructions

Step 1: Marinating the Chicken

  1. In a large bowl, mix the boneless chicken with yogurt, ginger-garlic paste, red chili powder, turmeric powder, coriander powder, cumin powder, garam masala, salt, and lemon juice.
  2. Stir well until the chicken pieces are well coated with the marinade.
  3. Let it marinate for at least 30 minutes to an hour, or overnight for deeper flavor.

Step 2: Preparing the Batter

  1. In a separate bowl, combine rice flour, cornflour, chickpea flour, and a pinch of salt.
  2. Add the marinated chicken pieces to this dry mixture. Mix well to coat the chicken in the flour mixture.
  3. Optionally, add a few crushed curry leaves for an extra burst of flavor.

Step 3: Frying the Pakoras

  1. Heat oil in a deep pan or wok over medium-high heat.
  2. Once the oil is hot (test by dropping a small piece of batter in—the oil should sizzle), gently drop the coated chicken pieces into the hot oil, one by one.
  3. Fry the chicken in batches, ensuring not to overcrowd the pan, for about 4-5 minutes or until golden brown and crispy.
  4. Remove the pakoras from the oil and place them on paper towels to drain excess oil.

Step 4: Serving

  1. Garnish the Andhra-style Spicy Chicken Pakoras with fresh coriander leaves.
  2. Serve hot with a side of mint chutney or tangy tamarind chutney for dipping. Enjoy!
